A variant to last week's Cafe con leche is a coffee with some cocoa mixed in. In its essence, Cafe Mocha means mixing coffee and hot chocolate, and although it is possible to make this one with instant coffee, the taste will be better balanced when using espresso. Also, for best results, you're supposed to add the coffee to a cocoa mixture and not the other way around.
